Pine Ridge Cabernet Sauvignon 2012 is made by winemaker Michael Beaulac using hand-harvested fruit from prime vineyard sites scattered throughout the Napa Valley in California. After de-stemming and fermentation the wine remained in contact with the skins for almost 3 weeks and was then matured for 17 months in a mixture of French and American (70/30) oak barrels, half of which were first fill. A deep garnet coloured wine with lots of dark and stewed fruits on the nose (blackberries and blackcurrant) together with some toastiness and vanilla from the oak ageing. On the palate it has a coffee bean character followed by lots of fruit, blackberry, cherry, raspberry all supported by a smooth tannic structure and some spiciness.2 BOTTLES OF THE 2008 REMAIN IN STOCK.
