Bodegas Castano Dulce Monastrell 2011 is made with fruit from the high altitude, limestone soiled, vineyards in the Yecla region of south-eastern Spain. Harvested in late October once 1the grapes had started to raisin the concentrated juice is fermented until the alcohol concentration had reached only 2-3% at which point grape spirit is added to arrest the fermentation leaving behind all the natural grape sweetness. The wine was aged for 8 months in oak barrels prior to bottling. A deep ruby coloured wine with lots of dried and ripe fruit on the nose. Rich, intense and unctuous on the palate with lots of dried fruit character balanced by the natural acidity of the grapes.
