Painted Wolf The Den Chenin Blanc is made by winemaker Jeremy Borg using fruit from a number of dry and irrigated 30 year old vineyard parcels in the Leeuwenuil district. After picking at optimum ripeness the juice is fermented at low temperature until some little residual sugar is left at which point the temperature is reduced even further to about 6oC at which point the fermentation produces more glycerol than alcohol, enhancing the mouthfeel of the wine. A lovely full bodied wine with tropical flavours (pineapple and melon) as well as some vanilla. All the fruit and the little residual sugar left is balanced by excellent acidity.
