Greywacke Wild Sauvignon Blanc 2014 is fermented without the addition of cultured yeast. Don't expect a standard New Zealand Sauvignon Blanc as the wine spends a year fermenting in large oak barrels with only the wild yeasts found on the grapes and in the cellar. The resulting wine also undergoes malolactic transformation giving the finished wine a roundness and slightly savoury character. On the nose it has pear and peach with a little note of nuttiness.
