Greywacke Pinot Noir 2012 is produced with fruit mainly from the Yarrum vineyard in Marlbourough's southern valleys. Hand-harvested fruit is chilled and then sorted to ensure only healthy fruit enters the fermentation. After partial de-stemming and crushing the juice and skins are cold-soaked before spontaneous fermentation begins. After fermentation the wine is aged in French oak barrels, about one-half of which are first fill, for 14 months before clarification and bottling. The bottled wine has lots of plums, berries and currants on the nose together with some hints of spice and flowers. On the palate it has intense dark fruit flavours balanced by super acidity and complemented by ripe tannins. Crisp, fresh and with super persistence.6 BOTTLES OF THE 2010 REMAIN IN STOCK.
