Inniskillin Icewine Riesling 2014 is produced in the cool climate wine-growing region on the Niagaran Peninsula in Canada. The Riesling grapes grown in the gravelly, mineral-rich soils are harvested in mid-winter when the ambient temperature of around -10oC freezes the grapes. Loss of water from the juice caused by the formation of ice crystals in the grapes means the must is concentrated and is fermented slowly using a selected yeast strain. Once fermentation is complete the wine is aged in bottle before release. Lots of pure Riesling fruit character on the nose, lemon and lime. Full-bodied and sweet but balanced by the great natural acidity of the Riesling variety, complex and well-balanced.
