Martin Codax Organistrum Albarino 2012 is made with fruit from an early ripening vineyard situated at about 100m above sea level. The juice is fermented in stainless steel and then malolactic transformation takes place in French Allier oak barrels before ageing in stainless steel for 7 months prior to bottling. The finished wine is straw-yellow and has citrus and stone fruits and a little smoke on the nose. On the palate it is dry, complex and nicely balanced with plenty of acidity to balance the fruit character.
