Excelsior Sauvignon Blanc 2014 is made by Johan Stemmet on the limestone-soiled, terraced-vineyards of the Robertson region. Some grapes are manually harvested, some early to provide acidity and others at higher sugar content, the two type giving balance in the finished wine. After de-stemming, cooling, crushing and a 6 hour skin contact period the must was fermented cool (15oC) for about 2 weeks followed by about 3 months of on the lees ageing to give superior mouthfeel. A pale golden wine with passion fruit, grapefruit and grass on the nose. On the palate the finished wine is dry and refreshing with good ripe fruit flavours.
