Crystallum Peter Max Pinot Noir 2014 is made by Peter-Allan Finlayson using grapes grown in three different vineyards in Elgin, Hemel-en-Aarde Ridge and Bot River. After being picked by hand the fruit is mostly de-stalked before being crushed and the must was kept cool for a few days before fermentation after which the wine was matured in French oak barrels for 10 months before bottling. The finished wine is elegant with notes of cloves, vanilla and violets together with some funky composty smells. Fine tannins on the palate with plenty of fruit and balancing acidity.
