Crystallum Paradisum 2012 is made with organically grown grapes from bush vines from three separate vineyard sites on the slopes of the Perdeberg mountain. After harvest 70% of the fruit (a blend of Syrah and Mourvedre (80/20)) was de-stalked, the rest left as whole bunches, before crushing and fermentation, which was allowed to occur spontaneously. The wine is deep purple with fennel, bay and rosewater on the nose. On the palate the Mourvedre gives some tannic structure and spice that is complemented by the by the luxuriousness of the Syrah.
