Crystallum Clay Shales Chardonnay 2014 is made by Peter-Allan Finlayson using grapes grown in a single vineyard in the hills around the town of Hermanus in the Walker Bay region. After harvest the fruit is whole bunch pressed and after a brief settling period the juice is fermented naturally in second-fill French oak barrels after which it remained on the lees for 11 months before bottling. A lovely balanced pale golden wine with citrus and stone-fruit flavours and a little butter and honey. Full on the palate and with a good length.
