Louis Bouillot Perle Noire is made using the traditional method by winemaker Olivier Medigue using a blend of Pinot Noir and Gamay sourced from across Burgundy but mainly the Champagne and Maconnais regions. After harvest the grapes are gently crushed and the varieties are fermented individually and the base wines blended before bottling and the addition of some sugar and yeast to allow secondary fermentation in the bottle and 15 months of bottling ageing before disgorgement and a dosage of 12g/l of sugar. The finished wine has a very pale pink tinge, plenty of red fruit character and fine bubbles. Nicely weighted on the palate with plenty of acidity to balance the fruit character and dosage. Good value for money.
