Ridgeview Bloomsbury 2012 Cuvee Merret is produced from whole bunch pressed, hand-picked grapes and then fermented with a specialised Champagne yeast strain. All of the wine is allowed to undergo malolactic fermentation, softening the acidity and roundening the wine and is aged for 8 months prior to bottling. The wine is pale golden with an attractive mousse. The majority chardonnay fruit gives a fresh fruitiness whilst the Pinot Noir and Meunier add complxity.
