Clos des Fous Cabernet Sauvignon 2011 is made by winemaker FranCois Massoc using grapes from the estate's Cabeza de Loco vineyard whose granite and volcanic soils impart on the wine a characteristic minerality, excellent acidity and soft tannins. After harvest the grapes are de-stemmed had a cold maceration period of some 5 days before fermentation raised the temperature during which the cap was gently punched down to extract colour and tannin. The wine was then aged in wood or cement vats for 18 months to give a deep ruby red wine with dark fruits, red fruits and a little hint of violets on the nose. It is fresh on the palate with plenty of fruit and balancing acidity and supporting tannins to give a wine with complexity.
