Inniskillin Sparkling Icewine 2014 in half bottles is made by winemaker Bruce Nicholson using 100% Vidal grapes from the Woerthle, Montague and Brae Burn vineyards in the Niagara region. Grapes were picked in a cold spell when the temperature of around -10oC froze the grapes on the vine. The frown fruit was pressed and the concentrated must was fermented in a sealed tank using a selected yeast strain until the alcohol level reached 9.5% at which point the wine was bottled. The finished wine has lots of exotic fruit on the nose as well as citrus and honey. The palate is marked by more primary fruit flavours including mango, pineapple and lychee and a pleasing and balancing acidity as well as a lively mousse.
