Inniskillin Icewine Vidal Gold 2012 is made with grapes grown on the gravelly, mineral-rich soils of vineyards on Niagara Peninsula. Not harvested until mid-winter when the temperatures of -10oC freeze the grapes on the vine. Ice crystals are removed from the juice during pressing giving a concentrated must ferments slowly using a selected yeast. The wine is aged for 4 months in French oak barrels and then after a further brief bottle ageing is ready for release. The bottled wine has an abundance of peach and apricot on the nose together with some notes of spice and vanilla. Tropical on the palate with good balancing acidity and well integrated oak influence.
