Dandelion Vineyards Lionheart of the Barossa Shiraz Half Bottles 2012 is made with hand harvested Shiraz from vines over 100 years old, many on the original rootstock in vineyards where Dandelions are encouraged to grow to minimise winter weed growth and provide green manure in summer. After a gentle crushing the must is fermented in open topped vats with regular plunging of the cap of skins for around a week before being pressed into oak barrels (25% first fill) where fermentation was completed. The wine was then aged for 18 months in the same oak prior to bottling without fining or filtering. A deep crimson wine with lots of plum and black fruits on the nose as well as plenty of spice and a little dark chocolate. Full on the palate with lots of ripe dark fruit supported by a fine tannic structure and good spice and chocolate notes.
