Acetaia Pedroni Aceto Balsamico Cento per Cento is made using the cooked grape must from Trebbiano di Spagna and Ruggine grapes grown in vineyards owned by the Pedroni family in the area around Modena. The must undergoes a slow, natural fermentation and a long period of ageing, typically around 2 years in casks made from a variety of different woods.
